This recipe uses W2 Callebaut white chocolate, known for its smooth, creamy melt, and Premium Matcha from Whispering Leaves—vibrant, earthy, and full of real green tea flavor.

Ingredients

  • 100g W2 Callebaut white chocolate (chopped or in callets)

  • 1 to 2 teaspoons Premium Whispering Leaves Matcha, sifted

Optional toppings: pistachios, sesame, flake salt, more matcha.

How to Temper W2 Callebaut Chocolate (Simplified Seeding Method)

Tempering gives your chocolate that clean snap and glossy finish.
Here’s a beginner-friendly way to temper W2 white chocolate:

Step-by-Step:

  1. Chop or weigh out 100g of W2 Callebaut chocolate. Divide into:

    • 67g (â…”) for melting

    • 33g (â…“) for seeding

  2. Melt â…” (67g) of the chocolate in a heatproof bowl over simmering water (double boiler). Stir gently and remove from heat when fully melted.
    🎯 Target temp: 40°C / 104°F

  3. Add the remaining â…“ (33g) and stir constantly to cool the chocolate.
    🎯 Cool to: 27°C / 80°F

  4. Gently reheat the chocolate just slightly—5 seconds at a time if needed.
    🎯 Final tempering temp for W2 white chocolate: 29–30°C / 84–86°F

Now your chocolate is tempered and ready to work with.

Add Matcha — Your Way

Sift in 1 to 2 teaspoons of Premium Whispering Leaves Matcha, depending on how strong you like it:

  • 1 tsp → mild & sweet

  • 2 tsp → bold, earthy & intense

Mix until fully incorporated. The chocolate should be smooth and a vibrant, natural green.

Pour & Set

  • Pour into silicone molds or onto parchment-lined trays

  • Tap gently to remove bubbles

  • Let it set at room temp or chill for 20–30 minutes until firm

Optional Toppings (Before it Sets):

  • Crushed pistachios

  • Toasted sesame

  • Flaky sea salt

  • Extra matcha dusted on top
